Every Saturday morning starts with crossfit at 7.30am. We generally have a good showing considering it is the weekend, and the WOD is normally cardiovascularly challenging. I think, well I know, that the biggest motivation to attend, is treating ourselves to breakfast after. My coaches are addicted to creamy mushrooms, and I have started to get real food envy as my breakfast is always the same, an omelette.

Creamy mushrooms normally consists of cream with a dash of acidity. Coconut yoghurt seemed like a good substitute as it is creamy and slightly acidic, and it proved to be an excellent substitute. The coconut flavour did not come through, making the mushrooms the star. Coconut yoghurt is also great in curries, but my favourite use of it is with cake.

Ingredients:

 

8 button Mushrooms

1 clove Garlic

1 tsp Oil

1/8 tsp dry Thyme

Salt and Pepper

 4 tbsp plain Coconut Yoghurt
